Dr. Denis M. Medeiros is Dean of the Graduate School and Vice Provost for Faculty Affairs at the University of Missouri in Kansas City. Most recently, he was a Full Professor, Department Head of Human Nutrition, and Associate Dean for Scholarship and Research at Kansas State University. He has been on the faculties of Mississippi State University, The University of Wyoming, and The Ohio State University. He has also spent time as a visiting faculty member at The Medical University of South Carolina in Charleston, South Carolina and Washington University School of Medicine in St. Louis, Missouri. His major research area has focused upon the role of trace minerals, particularly copper, on the integrity of the cardiovascular system; and the role of iron in bone integrity. He has received more than $4 million in grants to support his research endeavors from such institutions as the National Institutes of Health, The United States Department of Agriculture, and the National Science Foundation. He has authored or co-authored over 120 scientific peer-refereed articles. He has taught classes both at the introductory and advanced levels for undergraduate students and has taught graduate level courses throughout his career. Dr. Medeiros has received outstanding teaching awards for his efforts.

Robert Wildman received a PhD in Human Nutrition from The Ohio State University in 1994, MS in Foods and Nutrition from The Florida State University in 1991 and a BS in Dietetics and Nutrition from the University of Pittsburgh in 1988. He has been on the faculty at Ohio University, University of Delaware, University of Louisiana-Lafayette and is currently at Texas State University in San Marcos, Texas. Dr Wildman is a Fellow of the International Society of Sports Nutrition (ISSN) and is faculty at Texas State University. Dr Wildman is a registered and licensed dietitian with the American Dietetics Association and is the creator of TheNutritionDr.com has authored several nutrition books including The Nutritionist: Food, Nutrition and Optimal Health, Sport & Fitness Nutrition and the Handbook of Nutraceuticals and Functional Foods.
